London Dry Gin: the Rules, the Method and the Excellence of Italian Distilling
In the international world of spirits, the words London Dry do not indicate a geographical origin but a very strict production standard. It is the "classic method" of the gin world, a protocol that allows no shortcuts and that we at Puntamari chose to honour the richness of Salento's flora, just like the waters around the Punta Palascìa lighthouse.
But what makes a gin a true London Dry, and what are the alternatives in the world of distillation?
The Rigour of London Dry: a Pact of Transparency
The London Dry technique stands for integrity. To earn this title, a spirit must follow strict rules set at European level:
Spirit base: only high-quality neutral alcohol of agricultural origin is used.
Distillation of the botanicals: all botanicals must be extracted through simultaneous distillation of the alcohol with the plant ingredients (berries, roots, citrus) in traditional stills.
Zero additives after distillation: once the spirit leaves the still, it is forbidden to add artificial flavourings, colourings or sugars (other than in infinitesimal quantities). Only pure water may be added to bring it to the desired strength.
The result is a dry, balanced and crystal-clear gin, where the skill of the Master Distiller shows through without filters or chemical corrections.
Beyond London Dry: Distilled and Compound Gin
Although London Dry represents the peak of technique for many purists, there are other production approaches:
Distilled Gin: very similar to London Dry, but with one key difference: it allows flavourings, infusions or extracts to be added even after distillation. This gives producers more creative freedom, sometimes at the expense of the spirit's structural consistency.
Cold Compounded Gin: here there is no redistillation. Flavourings are added to the alcohol by simple infusion or by blending essences. It is a faster technique that rarely reaches the complexity and elegance of an artisanally distilled product.
The Puntamari Touch: London Dry Meets Salento
Unlike industrial productions, Puntamari elevates the London Dry concept through small-batch bain-marie distillation in a copper still, under the expert guidance of Master Distiller Angelo Panegos. This slow, gentle technique preserves the integrity of the essential oils of our Mediterranean botanicals.
The gentle heat of the bain-marie caresses the juniper, angelica and rosehip, drawing out floral and balsamic notes that blend with the citrus vitality of sweet orange, bitter orange and lemon. Myrtle completes this sensory embrace, giving a velvety, round and lingering sip.
How to Enjoy the Essence of London Dry
To appreciate the precision of a London Dry like Puntamari, we suggest two ways:
Neat: served cold with a lemon twist to bring out the balsamic notes and citrus freshness.
Martini Cocktail: the ultimate expression of elegance, where the gin's dry structure pairs perfectly with vermouth, enhancing the delicate savouriness of our spirit.
Choosing a London Dry means embracing conscious hedonism: certainty about what is in the bottle, the transparency of a centuries-old method and the pleasure of an authentic taste that, like the breeze at Punta Palascìa, never tires.
